 Hoppers Brewing Co is a modern production venue built around stainless and precision. We’re a working brewery with a 14-tap bar and an on-site distillery under the same roof. The idea is simple: fresh beer from tank to tap, plus clean, handcrafted spirits—vodkas and gins—made in-house. One venue, two disciplines, executed with consistency, quality control, and a focus on flavour.

Expect range and rotation across the 14 taps: crisp lagers, hop-forward pales and IPAs, and limited releases that keep the list moving. Behind the glass, our distillery produces small-batch vodkas and a lineup of gins—from classic juniper-led to contemporary profiles—showcasing the same attention to process as our beers. The Team

Josh — Head Brewer & Distiller. Over a decade brewing and distilling across Thailand and Australia. An Army veteran who brings discipline, process control, and clean execution—crisp lagers, hop-forward ales, and dialled-in spirits.

Noey — Brewer & Chef. A pioneering Thai brewer in Australia, Noey brings Thai flavour thinking into recipe design. A brewer by trade and a true all-rounder, she’s the friendly face behind the bar and the palate behind some of our most distinctive releases.

Dave — Operations. From oil and gas to brewhouse ops, Dave applies big-industry standards to a craft scale—process reliability, safety systems, instrumentation, and uptime. Dave keeps the taps flowing and pours the beers. Dave always has a great story to tell you about.
